Hi again!
Today we created new roasting profiles for our best quality coffees we got as samples for the crop 2013-2014. We roasted two batches (100 grams each) of Pacamara Finca San Joaquin and Red Bourbon Finca El Retiro from Pacas Farms in El Salvador. Both of them are Specialty Grade coffee which assures zero primary bean defects. They scored 86.5 and 82.5 respectively in the Cup of Excellence evaluation.
We roasted them carefully to achieve a light roast so their natural aroma, taste and notes are enhanced.
We are excited to cup them tomorrow! 🙂
